Scientific study published in the journal Foods explores a new, innovative approach by preparing kombucha using sea buckthorn (Hippophae rhamnoides L.) juice. Sea buckthorn is well-known for its high nutritional value, being especially rich in vitamins, phenolic compounds, flavonoids, proanthocyanidins, and antioxidants. However, the short shelf life of fresh sea buckthorn fruits often limits their effective utilization, prompting researchers to investigate novel preservation methods, such as fermentation.
This study, conducted by researchers from Northwest A&F University in collaboration with Puredia Limited, aimed to develop a sea buckthorn kombucha beverage (SBK) and explore how different fermentation temperatures (20 °C, 28 °C, and 37 °C) affect its quality, nutrient composition, antioxidant activity, and sensory attributes.
The findings indicated that fermentation temperature significantly influenced the kombucha's final characteristics. Notably, the SBK fermented at 28 °C demonstrated optimal sensory quality, the highest antioxidant capacity, and the most favorable profile of bioactive compounds. During fermentation, this sample exhibited a substantial increase in total phenolic and flavonoid content, reaching 10.92 mg/mL (GAE) and 9.62 mg/mL (RUT), respectively. This increase correlated positively with the kombucha's antioxidant activity—demonstrated through DPPH and ABTS radical scavenging and total reducing power assays.
In terms of sensory evaluation, SBK fermented at 28 °C scored highest in appearance, color, taste, and overall acceptability, suggesting a good balance between taste and nutritional functionality. Electronic nose and tongue analyses further confirmed significant differences between sea buckthorn kombucha and traditional green tea kombucha, highlighting unique flavor notes and sensory profiles.
Interestingly, the study also found that the antioxidant capacity of SBK was not solely attributable to phenolic and flavonoid compounds. Researchers speculate that the exceptionally high vitamin C content in sea buckthorn may synergistically enhance the antioxidant potential of the beverage, a hypothesis warranting further investigation.
