Key Findings:

In this study, researchers successfully extracted high methoxyl pectin (SBHMP) from sea buckthorn peel, achieving a yield of 8% with a high degree of esterification (57.75%) and significant uronic acid content (65.35%), indicative of a high-quality pectin. Structural analyses using Fourier-transform infrared spectroscopy (FTIR) and high-performance liquid chromatography (HPLC) revealed that SBHMP mainly consists of homogalacturonan (HG) and rhamnogalacturonan-I (RG-I) polysaccharide types, enriched with monosaccharides such as galacturonic acid, arabinose, galactose, rhamnose, and mannose. Electron microscopy (SEM) revealed a unique sheet-like, layered structure, contributing to its excellent solubility and functional properties.

The research further demonstrated that SBHMP exhibits outstanding gelation properties under acidic conditions and in the presence of high sucrose concentrations. Specifically, stable jelly-like gels were formed at pH 2.0-2.5 with sucrose concentrations of 55–60%. Rheological analyses indicated that SBHMP gels possess shear-thinning behavior, a desirable trait for many food applications. Additionally, the apparent viscosity of SBHMP solutions was significantly enhanced by increasing pectin and sucrose concentrations, demonstrating its effective thickening capabilities.

Importantly, SBHMP also exhibited strong emulsifying properties. Oil-in-water emulsions stabilized by SBHMP showed increased stability as the pectin concentration increased from 1.0% to 3.0%. Microscopic observations and particle size distribution analyses confirmed that emulsions with higher SBHMP concentrations (2.0–3.0%) maintained smaller droplet sizes and greater stability over 7 days of storage. This highlights SBHMP's potential as a natural emulsifier in food systems.
